The concentration process, although gently made, results in the loss of certain volatile aromatic components. The majority of those components can be captured from the evaporated water and later on added back to either the juice concentrate or to the final beverage.
In citrus fruits you will also find important aroma components in the peel. The peel oil originates from oil sacs in the peel which are ruptured in the extraction process and the oil is mixed with water. The oil is separated from this emulsion and can be used in a great variety of applications in the food and beverage industry.
